E siamo giunti al giorno 6 del calendario. Un kringle scandinavo tradizionale, uno dei più classici, intrecciati, bello da vedere e buono da mangiare, che riempirà la vostra casa di una calda fragranza di burro e cannella.
Questo ci ha dato il buongiorno, noi che qui al Cottage la notte appena trascorsa abbiamo aspettato San Nicola per vedere che doni ci avesse riservato e ci avesse lasciato negli stivali bei lucidi e puliti.
Un San Nicola per la piccolina di casa, ma che ci ha deliziati tutti.
Niente foto extra, niente racconti extra, oggi vi lascio con poco, con questa ricetta che vale la pena provare.

Ingredienti:

  • 300g di farina (mix di 00 e Manitoba)
  • 7g di lievito di birra fresco
  • 130ml di latte intero tiepido
  • 2 cucchiai di zucchero a velo
  • 1 uovo intero
  • 30g di burro morbido
  • 1 pizzico di sale
  • per il ripieno (50g di burro, 2 cucchiai abbondanti di cannella, 1 cucchiaio colmo di zucchero muscovado)

Mettere nel latte tiepido il lievito, lo zucchero e l’uovo e mescolare finché non saranno sciolti. In una ciotola versare le farine e il sale. Mescolare con una forchetta e poi aggiungere gradualmente il latte. Impastare fino ad ottenere un impasto liscio e omogeneo. Mettere l’impasto in una ciotola pulita sulla quale avrete spalmato un po’ di burro e lasciate lievitare in un luogo riparato e tiepido per circa 2 ore. Quando l’impasto avrà raddoppiato di volume, stenderlo con le dita su una spianatoia infarinata. Formate un rettangolo sul quale spalmare il burro mixato con cannella e zucchero. Arrotolate l’impasto ed infine con un coltello ben affilato, tagliatelo a metà per tutta la lunghezza lasciando una delle estremità intatta e gli strati rivolti verso l’altro. Intrecciate sovrapponendo i due lembi e poi chiudete l’impasto a corona. Mettete su una teglia foderata con carta forno e lasciate riposare per circa 30 minuti in un luogo tiepido. Infine fate cuocere nel forno preriscaldato a 170°C per circa 35 minuti.

An estonian cinnamon braid bread perfect for Christmas days.

Ingredienti

  • 300 g of flour mix of 00 and Manitoba
  • 7 g of fresh yeast
  • 130 ml of warm whole milk
  • 2 tablespoons of powdered sugar
  • 1 whole egg
  • 30 g of soft butter
  • 1 pinch of salt
  • + for the filling 50g of butter, 2 abundant tablespoons of cinnamon, 3 or 4 tablespoon full of muscovado sugar

Istruzioni

  • In a medium bowl stir fresh yeast with sugar until it liquefies and then add the lukewarm milk.
  • Add the egg yolk and the melted butter.
  • In a bowl whisk salt and flour and add the milk.
  • Knead it until it pulls away from the edges of the bowl.
  • Sprinkle some melted butter onto a clean bowl, place the dough and cover with plastic wrap. Let it rest for about 2 hour at room temperature in a warm space, until doubled in size.
  • While the dough rises, whisk together the butter with sugar and cinnamon for the filling. Set aside.
  • On a floured surface, using a rolling pin roll the dough to a rectangle of about 45x35 cm.
  • Spoon the cinnamon filling over top.
  • Roll up the dough and using a sharp knife, cut the log in half lengthwise leaving one edge uncut for about 10cm.
  • Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top.
  • Pinch the ends together and form a wreath.
  • Transfer the braided dough into a baking sheet with parchment paper.
  • Bake in the preheated oven at 175 ° C for about 30 minutes.
